I would drink 30 minutes before eating or 1 hour after. If the rice is polished no. Also add a salad.

I’m vegan, so that sounds pretty good to me. I eat that kind of thing a lot. Plenty of good fiber there, very low fat and cholesterol-free, so yes, I’d say heart-healthy. But I’d add a plant-based protein source to make it more complete for sure –something like lentils, beans, nuts, tofu, tempeh, etc. Some chickpeas or slivered almonds might be especially nice with that combination.

Well, on the plus side, it might be of moderate caloric content (depending on the portion sizes), it would be low on saturated fats, be low in sugars, and you would have nice combination of aminoacids (you’d be getting high quality proteins) .
On the down side, it will be very high in starches. You might want to add some greens or other vegetables.

Brown rice is better as it still has more fiber and nutrients. Both of the veggies are rather starchy ones but still are good for you. I would recommend that you add some protein to your meal. That will help sustain you for a longer period of time than strictly carbs. Also, you want to make sure you have some fat in your diet. Your body needs some fat to work efficiently. Perhaps you can add a teaspoon of healthy oil (safflower, canola, olive and flax seed oils are very healthy) into your food.
